TGIF my friends! Wahoo. I’m so excited that the weekend is almost here. This weekend is going to be packed with festive Halloween activities. Tonight, Bryan and I are g0ing on a haunted hayride with some friends, and on Saturday we are going to my dad’s Halloween party.  I also plan on watching Hocus Pocus at least once this weekend. It’s a necessity. 

Switching gears a bit, let’s get into this week’s Friday Favorites.

Curry Coconut Mahi Mahi

I made curry coconut mahi mahi last week and it was off the charts! I posted a photo on Instagram, and some of you were hoping that I’d share the recipe. I didn’t create the recipe myself, but instead adapted an existing recipe from Taming on the Spoon. {I removed the fish sauce because I didn’t have any and I hate the smell.} I paired it with a simple kale and beet salad topped with a lemony vinaigrette. Yum. 

Bryan and I both loved how the dish turned out, and he’s difficult to please when it comes to seafood. The mahi mahi was so insanely flavorful because of the ginger and lime juice! I’ve saved the recipe to Pinterest and am already planning on making it again soon.

New Anthropologie in King of Prussia Mall

PSA to all my Philadelphia-area readers: RUN don’t walk to the new Anthropologie in the King of Prussia Mall. Holy hell, you guys. This place is the mecca of all shopping. It’s the biggest Anthropologie I’ve ever seen. The store has a section for home, clothing, shoes, accessories and more. They also carry all of my favorite beauty items, including my fav acne spot treatment and lip balm!

I stopped in a few weekends ago and I probably spent close to an hour walking around. Thankfully, Bryan was enjoying a bloody Mary at the bar in the mall so I didn’t feel rushed. I didn’t end up buying anything that day, but I went back recently and purchased coasters that have been on my wishlist for a few years now. I couldn’t wait to toss our old, ugly, wooden Ikea ones. The Anthro coasters are really high quality and are absolutely stunning. I’ve already received so many compliments on them.

If you’ve been reading Simply Nicole for a while now, you know that I talk about this a lot – Bryan hates decor that has no purpose. He sees it as a waste of money {I disagree!}. These coasters are a piece of decor that’s not only gorgeous, but obviously very functional. WIN!

Crafting the Perfect Holiday Playlist

As much as I love Halloween, I’m anxiously awaiting for it to be over. Why?! So that it can be socially acceptable to start listening to Christmas music. Ha! What can I say? I like getting into the holiday spirit as early as possible. BUT, I’m very particular about music and Christmas music is no different. Music can really make or break the ambiance. You know?!

Every year, I like to create my own holiday playlist on Spotify {I’ve already started putting together this year’s!}That way, I can listen to it whenever I want – while I’m at work, while I’m baking cookies, while I’m cleaning my apartment, etc. The perfect holiday playlist usually includes Michael Bublé, She & Him, and of course N*SYNC. What would Christmas be without “Merry Christmas, Happy Holidays” by N*SYNC? A terrible Christmas, that’s what.

Juice Bar at Whole Foods

Bryan and I visited the new Whole Foods in Philadelphia a few weekends ago, and it’s amazing. It’s like a normal sized store, but on steroids. They’ve got the largest cheese section I’ve ever seen, as well as a full-service bar, hot foods area, lifestyle section, and my favorite – a juice bar! 

Since I’m a HUGE green juice fan, I got in line and ordered the Green Goddess. Of course, Bryan had to copy me and get a juice too. He went with one called the Turmeric-Aide. In case you’re wondering, the Green Goddess had pear, pineapple, cucumber, kale, spinach, broccoli, parsley and lemon. YUM. The Turmeric-Aide is perfect for anyone with a cold, because it really clears out your sinuses. That one had coconut water, pineapple, lemon, ginger and turmeric. 

My local store doesn’t have a juice bar and I’m DYING for them to get one soon. My wallet will hate me, but my health will love me. Haha, isn’t that usually how it works? All good things cost a lot of money – green juice, yoga and barre classes, acupuncture. The list goes on and on.
