Wednesday Round Up via simply-nicole.com

Whoa. Yesterday, Bryan surprised me with dinner reservations at this vegan restaurant called Vedge. It was named the best restaurant in Philadelphia a few years back, and has been in the top 5 ever since. To say I was excited would be an understatement. If you follow me on Instagram, you probably saw my InstaStories with photos of some of our food. OMG, you guys. I couldn’t believe that everything we ordered was vegan, especially the dessert:

  • Stuffed Avocado: romesco, pickled cauliflower, “fried rice,” black salt
  • Rutabaga Fondue: today’s soft pretzel, yesterday’s pickle, charred onion
  • Wood Roasted Carrot: pumpernickel, garbanzos, carrot mustard, carrot kraut
  • Eggplant Braciole: smoked eggplant, italian salsa verde, cured olive
  • Campfire Potatoes: black garlic tehini, za’atar
  • Chocolate Uber Chunk: malt custard, pretzels & peanut butter, stout ice cream

It sounds like a lot of food, and it was – even though they were small to medium sized plates. Bryan, who’s the biggest meatatarian, said that it was fantastic. He even told me that he was actually full afterwards. Everything was SO incredible, that I’m already planning my next visit. Until then, I’ll just keep dreaming about that rutabaga fondue, which I swore was actual cheese.

Alright, now that I’m extremely hungry just thinking about last night’s dinner… let’s get into the Wednesday Round Up.
