Yummy Avocado Toast

Avocados have been a staple of mine for years now. I love them in salads, guacamole and even by themselves. My favorite way to eat them, however, is on toast! It probably sounds strange to you if you’ve never tried it, but I promise that it’s delicious. As much as I love avocados, the one thing that annoys me is that I almost never finish it. I wind up either throwing the rest out or putting it in the refrigerator and forgetting about it. That was until I discovered Gator Eggs, the single serving avocados!

I love Gator Eggs because one “egg” is the perfect serving size for avocado toast. It’s pointless to even make this a “recipe” post because there’s really not much to it. You just toast bread, scoop out the avocado, smear it on top of the toast, and add a sprinkle of sea salt. If you’re wondering, I used Ezekiel Bread and pink Himalayan sea salt. The Ezekiel Bread was perfect for avocado toast, because it’s dense and hearty. It wouldn’t have tasted as good if we used regular wheat or white bread. You can find Ezekiel Bread in the freezer section of your grocery store near the organic foods.

Bryan typically isn’t a huge fan of eating avocados by themselves, but he really liked the avocado toast. He even brought it up afterward and said we have to have it again this week. Next time we make it, we might try adding a bit of lime juice to add even more flavor. I can’t wait to have this again soon!

That looks so good! I need to try this!

Mmm LOVE avocado, on anything and everything. The gator eggs are so cute; wish I had some near me! I’ll keep my eyes open… And even though I no longer eat wheat, honestly seeing this makes me want to buy Ezekial bread just to smear avocado, sea salt, and lemon juice all over it! What a savory bite!

This is so interesting! In the pictures they don’t look that small, I want to find these so I can see them in person now!
