Summer Grilling with Smithfield

This weekend, I wanted to put together a delicious summer meal using our electric grill. We live in an apartment complex, so we’re not allowed to have a propane gas grill. The joys of apartment living. We don’t pull it out too often, but when we do, the meals always taste delicious.

Up on the agenda yesterday was a Smithfield garlic and herb pork sirloin that I purchased at Walmart. Although I don’t eat meat, I have no problem making it for Bryan. Cooking the pork was a breeze, since the marinade was already included in the package. The instructions on the package said to cook covered, so we used a deep metal pan lid.

For the side dishes, I made thinly roasted potatoes and a simple salad using spring mix, an avocado, tomatoes, and a red pepper, topped with a zesty Italian dressing. Everything came together so nicely!
